So I've been on a somewhat diet lately, not starving myself and only eating celery but teaching myself how to cook and cook healthy food. I am eating more healthy items, more often. I love cabbage and it is one of the bestest (is a word) veggies out there. I usually like it cooked but with summer and all I thought I'd make something chilly.
1 head of cabbage, red or green, chopped, spliced or sliced.
A handful of sweet dried fruit, I used currants but I am sure raisins are yummy too.
1 cup FAT FREE sour cream
2 tablespoons sweetener (ie honey, agave, simple sugar...)
1 tablespoon of mustard, dijon or stoneground
2 tablespoons of apple cider vinegar (yum)
Squeeze of one small lime
1 fresh jalapeno minced
some chili powder (chipotle works great)
a pinch of dill
salt and pepper to taste.
1. Chop cabbage.
2. Mix all the dressing ingredients together, including the jalepeno. (I added the salt after the dressing to ensure quality control).
** You can add more or less sweet if you like it more or less sweet, and more or less chilies (or no chilies) if you like more or less heat. (ha, rhymed!)
3. Mix the dressing with the cabbage until coated.
4. Toss over the handful of dried fruit
& Ta! Da!
So I ate mine straight away (I was hungry) but it gets even better when chilled for a bit. And you could add apples, bell pepper, celery, sunflower seeds, etc. (I think of everything don't I?)
