My good friend Karen turned me on to an awesome summer salad and although I don't spend much time in the kitchen an early morning trip to the farmers market inspired me to try to recreate it.
However....
I ended up with only a few of the ingredients on hand and did a lot of changing to make a new version, just for me/you. For those of you looking for an amazing Kale recipe here is the actual recipe Massaged Kale Salad
and if you're looking for something else, here is mine, littleput style:

Needs:
- 1 bunch of kale.
- a bit more than a smidge of olive oil.
- apple cider vinegar 2-3-4 teaspoons.
- fresh farmers market raspberries, lots and lots! (instead of currents called for in the original)
- red onion, finely chopped and just some
- flax seeds (instead of sunflower) also lots and lots
- jicama, about a cup or so (instead of the apple).
- just forget the cheese because you don't have any.
- salt and pepper to taste.
Remove the stems from the kale, wash well and cut into 1/2"-1" pieces. Place in a large bowl and add just enough olive oil to lightly coat the leaves. Wash hands.
Massage (yes I said massage) the olive oil into the leaves (you can add the salt now too) until the kale feels soft and turns a dark green, I did mine for about 7 minutes.
Look in fridge and see that you have none of the called for ingredients, make appropriate substitutions, add the onion and then think maybe you shouldn't have. Mix in all the ingredients except the raspberries and stir. Sprinkle LIBERALLY with raspberries and add pepper to taste.
My salad was a bit on the bitter side so I let it sit (rest is the fancy term) for about 15 minutes and viola!
I would maybe leave the onions out of my version but I like savory salads and not bitter ones. It seems most any nut would work well instead of flax seeds and just about any sweet/tart fruit is a great addition.
